Vegetarian Lasagna Recipe
Lasagna Noodles
10 PK oz frozen broccoli
14 1 / 2 ounces tomatoes
15 oz tomato sauce
1 cup chopped celery
1 cup chopped onion
1 cup Grn / Sweet Red Pepper
1 1 / 2 teaspoon crushed dried basil *
Bay leaves
Minnced clove garlic
Egg, beaten
2 cup Lo-fat Ricotta or House Ch
1 / 4 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
* Or substitute 1 / 2 tons of dry oregano 1 / 2 tons of the dried Basil Cook noodles and broccoli separately according to their instructions on the package, drain well. Set aside.
For sauce, cut the canned tomatoes. In a large skillet combine undrained tomatoes, tomato sauce, celery, red or green sweet pepper, basil, bay leaf and garlic. Bring to a boil, reduce heat. Simmer, uncover, 20-25 minutes or until sauce is thick, stirring occasionally.
Remove bay leaves.
Meanwhile, in a bowl, mix eggs, ricotta, Parmesan cheese and 1 / 4 t. pepper Add broccoli. Spread about 1 / 2 cup of the sauce into a dish 13x9x2 "baking. Cover with half the noodles, half broccoli mixture and half the remaining sauce.
Repeat layers, ending with sauce.
Bake, uncovered, in oven at 350 degrees F for 25 minutes, sprinkle with mozzarella.
Bake 5 minutes more or until heated through. Let stand 10 minutes before serving.
